Carrots from the oven

Carrots are not only delicious but also incredibly healthy.
They are rich in beta-carotene, which is converted by your body into vitamin A, which is good for your immunity.

Preparation:

Heat the oven to 200 degrees.
Halve the carrots and shallots (or onion in large pieces).
Mix with the olive oil and herbs.
Spread on a baking sheet lined with baking paper.
Roast for about 25 minutes in the center of the oven.
Remove from oven and season with salt, pepper and balsamic if desired.
Delicious with chicken.

Ingredients:
  • 600 gr rainbow carrots
  • 4 shallots or 1 onion
  • 1 teaspoon of rosemary or Provencal herbs
  • 3 tablespoons of olive oil
  • possibly 2 tablespoons of balsamic vinegar
