Frittata with kale
You may call kale a super vegetable of ours.
This vegetable naturally contains many antioxidants and is an excellent source of vitamins A, K, C and folic acid as well as fiber and calcium.
Therefore, put it on the menu more often.
Kale is a true fall and winter vegetable: from September through February it is at its best.
Do not confuse kale with green cabbage.
Kale consists of all loose leaves with a curled edge, hence the name curly kale.
Preparation:
Heat the oven to 180 degrees.
Remove the hard core of the kale and chop finely.
Beat the eggs, add the cheese, pepper and salt.
Melt the butter and sauté the onion briefly in an ovenproof pan or pot.
Add the kale and the olive oil.
Stew for 5 minutes.
Pour the egg mixture over the kale and wait until the bottom of the frittata forms a firm consistency.
Place in the oven for 6-10 minutes.
