Pasta with salsify

Salsify is often compared to asparagus. However, the taste of an asparagus is slightly finer.
The salsify is also not so popular with the general public.
However, a good preparation with salsify does not have to be inferior to asparagus.
The salsify contains a lot of iron. It also contains inulin, a starch made up of fructose, which makes salsify suitable for people with diabetes.
Salsify is rich in fiber and contains vitamin C.

Preparation:

Peel the salsify and immediately put them in water with lemon juice.
Cook the pasta.
Peel the onion and chop finely.
Cut the salsify into pieces.
Fry the onion in the butter.
Add the salsify.
Season with pepper, and nutmeg.
Add the cream and reduce briefly.
Add the pasta and mix.
Delicious with grated parmesan cheese.

  • 200 gr salsify
  • 200 gr pasta
  • 125 ml of cream
  • 1 lemon
  • 1 onion
  • 2 tablespoons of butter
  • Pepper salt nutmeg
