Spinach soup

The different types of spinach There are three types of spinach available.
You have wild spinach, coarse-leaf spinach and young or baby spinach or small-leaf spinach.
For salads, for example, the small-leaf spinach is suitable. It is available in spring and fall.
In the supermarket you will find the larger variant spinach starting in March/April. This larger variety is good to use in hot dishes or for cooking. Because of the irregular leaves, this wild variety is firmer.
Precooked spinach in a jar or can is also available in the supermarket.
You can also often buy frozen spinach or fresh spinach.

Preparation:

Sauté the onion in olive oil in a large pot.
Add the potato pieces with a little water.
Stew until the potatoes are tender.
Add 1 liter of water and the bouillon cubes and bring to a boil.
Add the spinach while stirring, allow to wilt.
Blend the soup and season with salt and pepper.
Serve with a dash of cream.

  • 2 peeled and chopped potatoes
